Healthy slow cooker recipes have recently become my go to for busy nights. Since I am working from home full time now I am able to throw all of the ingredients for my healthy slow cooker recipes into my crock pot during lunch and have a healthy delicious dinner ready in time for everyone to get home. I usually do all of meal prep and planning on Sunday and this week I decided I would go with all healthy slow cooker recipe ideas! I just threw one in my slow cooker and made the Slow Cooker Chicken Burrito Bowl last night!
HEALTHY SLOW COOKER RECIPES
1. SLOW COOKER BURRITO BOWLS
I made this one last night and it was delish! I love burritos and tacos and my family does too. I did a few things differently. Since I know chicken will be fully cooked within 2 hours, I did 2 hours for the first step and then shredded the chicken in my Kitchen Aid mixer. This is my favorite shredded chicken hack! Place it in the mixer with your paddle on and turn it on. You will have perfectly shredded chicken in minutes. Since I did 2 hours on high for the first and second steps, the recipe only too me a total of 4 hours instead of 8. Click the image below for the full recipe or click here
2. SLOW COOKER SPAGHETTI SQUASH AND MEATBALLS
I am currently making this recipe and couldn’t be more excited! I love that you can use store bought meatballs and the spaghetti squash is the perfect low carb option. For my family, I will probably also make some gluten free pasta right before it is ready so we have the option to have either. You can find the recipe here.
3. MEDITERRANEAN PORK WITH COUSCOUS
Another recipe I am planning on trying this week is this one! Since our family doesn’t really tend to eat pork, I am going to make it with chicken instead and a side of roasted broccoli! Find the recipe here!
