So I thought I would start sharing a few more easy weeknight dinners here and there that I am currently making. This week I wanted to share the three recipes I made this week! 3 Easy Weeknight Dinners to Make this Week:
1. Weeknight Bolognaise
This is a favorite of Mark’s. It is easy enough to make on a Monday night but it is also a hearty meal that you will go back to over and over again. In fact, I think I have been making this dish for at least the past 4 years! I make it with gluten free pasta and grass fed/finished beef.
2. Gluten Free Buffalo Chicken
This one was probably my favorite for the week! Mark challenged me a few weeks ago to try to make a gluten free buffalo chicken and of course I was up for it! I used chicken tenderloins and baked them in the oven. I had purchased some gluten free tortilla wraps and made them into a gluten free buffalo chicken wrap. I love the idea of making it a sheet pan meal though! I think I might try that next week!
3. Instant Pot Chicken and Rice Soup
If you follow me on Instagram, you know we mostly eat gluten free because of Mark’s allergy and you also know how much I LOVE my Instant Pot. Last week Mark was sick and I wanted to cheer him up with some chicken noodle soup. I knew our only chicken was frozen so I thought I would search for a chicken soup recipe that was gluten free and that I could use frozen chicken. Let’s just say Mark thought this was one of the best soups he has ever had! Major win for me!
